Years ago, all doughs were fermented. As a time saving process, people got away from this process.  

At Gigi’s we ferment our dough using what’s known as a cold fermentation process.  The result is a better tasting dough that is often easier for some to digest. We use the same dough for pizza and calzones (sorry, no gluten-free calzones).
